When you have left over rice don't let it go to waste as you can make various use with it.
INGREDIENTS
3 cups of left over rice
3 tbs vegetable oil non cholesterol
1 medium onions, chopped
1/4 tsp salt
2 carrots, finely chopped
1 medium green bell pepper chopped
1/2 cup frozen peas
3 egg
2 tsp reduced-sodium soy sauce
1 tsp sesame oil
1/2 tsp black pepper (Cameroon pepper blended)
DIRECTION
In a large frying pan, add just enough vegetable oil to thinly coat most of the pan over medium-high heat
Add chopped onions and fry till its golden brown; add left over rice and fry together.
Push the rice to one side of the pan with your cooking spoon, then push the pan to the side of the burner so that the empty side of the pan is in the middle of the burner.
Increase burner high and add whisked eggs stir-fry until the egg is cooked and in small pieces (whisked egg include little salt and black pepper).
Reduce burner back to medium-high; mix rice and egg together and add salt, pepper, frozen peas, carrot and bell pepper; mix all the ingredients together until vegetables are tender-crisp, about 5 minutes
Sprinkle soy sauce and sesame oil to taste, stir it all up and serve immediately.
