HAPPY PANCAKE DAY (PANCAKE RECIPE)

I woke up Saturday morning with the intention of preparing vegetable yam porridge (ehhh I no what is going through my friends and family's mind... YAM ADDICT I agree). 

While brushing I realise the tap has stopped running and there was no light to pump water and we had very little water left in the dispenser.... hunger was our friend that morning... 

We started our usual food brain storming session on what to prepare that would not require plenty water and so we agreed on pancakes.

Saturday breakfast was some pancakes and very chilled amstel malt.

INGREDIENTS FOR 2:

1 cup all-purpose flour, sifted before measuring
1 teaspoons baking powder
1 ½ tablespoons granulated sugar
¾ teaspoon salt
1 large egg
1 cup of milk
1 tablespoon melted butter or cooking spray
Optional: fresh pepper diced in tiny bits
          onions diced in tiny bits 
PREPARATION: 
Sift flour, baking powder, salt and sugar together In a separate bowl

whisk together the eggs and cup of milk;
add to flour mixture, stirring only until smooth. 
Blend in melted butter and if the batter seems too thick pour, add a little more milk. 
Heat a large skillet over medium heat, and coat with melted butter or your cooking spray. 
Pour ¼ cupfuls of batter onto the skillet, and cook until bubbles appear on the surface, a little dry around the edges, and lightly browned on the bottom; flip with a spatula and cook until browned on the other side.

Nice, neva knew u cud put onions n pepper in pancakes...pls instead of gathering allds ingredients can one jus use d pancake mix...there's one iv tried aunty jemimah...and itsjust to mix n pour into d pan.

thanks ....yea fresh pepper and onion adds its own flavor to the mixture....for the pancake mix not everyone likes it; i no alot of people who wud rather do the mixture themselves. i love krusteaz buttermilk better i tried the mix and pour one tyme didnt enjoy it, would look out for aunty jemimah
