OFE AKWU (BANGA STEW)

INGREDIENT:
Palm fruit (Akwu)
Blended dry fish
Diced Nchuawu leaf (scent leaf) and/or ugu (pumpkin leaf)
Chicken or any of the following protein choice; goat meat, smoke fish, beef, fresh fish.
Stock fish (optional)
Blended crayfish
Fresh pepper blended
Onions diced
Knorr cube
Salt

PREPARATION:

Boil your palm fruit till its properly cooked and pound in a mortar or use your hands to squeeze out the juice; extract the juice using warm water and make sure its thick enough. Per boil your extracted juice to thicken it.
Before hand spice and boil the chicken and stockfish or protein of your choice and when the juice is thick enough add the steamed chicken allow to cook for 5 minutes then add your salt, maggi, blended pepper and diced onions. Stare properly and then add your smoked fish, blended crayfish and dry fish and allow to cook for about 3 minutes; then add your scent leaf after 1 minute you add your pumpkin leaf (some people might prefer to use just scent leaf only which is good). Allow to cook for less than 3 minute and your ofe akwu is ready.

Enjoy your ofe akwu with boil hot white rice.
