COW ASUN

I just realise I have not posted my 2013/2014 Xmas  new year kitchen venture and I thought I should start with my cow Asun.


it was fun and I enjoyed every single day I spent in  the kitchen cooking.


what is Asun? am sure you all would be wondering why I called it cow Asun.

ehhh I was thinking of a name for it; couldn't make out a good name and since it was inspired by the famous Asun which we know as goat meat I decided to add cow to the Asun. Actually Asun is not well known in some part of the states but more famous in Lagos (I think).

This package was as a result of excess meat in the freezer before Xmas holiday knowing that more meat would be visiting the freezer we decided to make space for the new meat.


You can enjoy this package with just anything food. *wink*


Ingredients:

Tomatoes dice
Pepper dice
Onions dice
Bouillon cube
salt
Vegetable oil
Cow Meat

Preparation:

1. Dice meat in small chunks and per-boil, spice properly to your taste and allow it cook till your meat is tender then drain.
 2. Heat oil then fry meat; fry in batches so your meat gets to fry thoroughly. 

3. After frying your meat, reduce oil and add onions, stir for 2 minutes, then add tomatoes and pepper; Stir continuously till you get your dry sauce. 
  4. Add salt, bouillon cube and any other spice you wish to add after stirring add your fried meat into your sauce and mix properly. allow to cook for another 5 to 10 minutes guess your Cow Asun is ready.

Position Description
Business Development & Marketing Internship at Nylah’s Catering outfit‎ geared towards providing excellent service and good customer relationship.

Responsibilities
The Business Development & Marketing Intern will have the unique opportunity to help shape the marketing strategy of the company, he/she will help with outreach and business development duties as assigned, which will include:
· Researching and identifying  potential clients
· Reaching out to current clients  and developing new opportunities
· Helping to shape the marketing    strategy of new program areas
· Planning and preparing    presentations
· Writing reports
· Providing management with  feedback.

Qualifications
The ideal candidate for the Business Development & Marketing Internship will possess:

· A background in business
· Ability to work independently  and capable of taking initiative  on specific projects
· Excellent research skills
· Strong written and verbal  communications skills
· A positive and flexible attitude

Schedule & Compensation
Interns must be able to commit to at least 3 months, and preferably longer. Transport fee will be allocated to Interns with other benefit which include commission.
Intern will be expected to be available 20–30 hours per week. Academic credit may be offered.

YOUR SEASONING (BOUILLION) SPICE

Bouillion is what we call seasoning spice or as we locally call all of the brands in Nigeria (maggi). 
we still have our local seasoning in which includes Ogiri, Dawadawa, Iru, and Okpeyi; those days our our grandmother uses these local brands to prepare sweet delicacy without adding the new brands and these local seasonings are considered highly proteinous and medicinal. These days we use these local brands and still combined it with bouillons to prepare soup. 

The Igbos uses Ogiri to cook soups like bitter leaf, oha, ofe owerri, to name a few while Iru or Dawadawa is used in cooking ewedu, egusi soup, etc. We have several brands of food seasonings available in the open market today, star maggi seasoning, Knorr, Royco, Doyin, Jumbo, Suppy which are in cubes; Onga, Mixpy, Benny are in powdered form or  Monosodium Glutamates (MSGs)like we locally call white maggi includes A-one, Vedan, Aji-no-moto, Sasa, and Tasty King.
Most Nigerians goes to the market asking for “Maggi” when the actual understanding is to buy a brand of food seasoning and not necessarily the Maggi brand. you would need to identify the particular brand that is wanted.

With the presence of numerous brands, the players need to adopt different strategies to gain the market population and loyalty.has instigated a big market competition, forcing players to adopt different strategies to have a larger chunk of the market and build brand loyalty.

Mince Lamb in Mixed Veg Sauce by Ms Diamond

It's healthy mince lamb with kidney beans,mixed veg and tomatoes:

Ingredients:
Mince Lamb
Kidney Beans
Mix Veggies
Fresh Pepper
Fresh Tomatoes
Crayfish
Onions
Olive Oil

Preparation:
Heat up vegetable oil in your wok;
Fry the mince lamb in hot oil adding onions; after 3mins add tomatoes, pepper,salt and bouillon cube stir properly allow it cook for another 4 mins before seasoning with curry powder and a little crayfish; 
stir until mince lamb and tomatoes is cooked 

Add water a little cup of water; 
bring to boil for 5mins; 

Then add the kidney beans and mixed veggies; 
Less than a minute remove from heat.

Enjoy Mince lamb in Mixed Veg Sauce with Boiled Rice, Spaghetti, etc.....

AFFORDABLE HEALTHY VEGGIES BREAKFAST BY SIMI

I had always had the feeling that healthy eating is too expensive and because of that, I don't bother buying veggies nor DIY.

Okay so yesterday I decided to do my best bargain veggie shopping and here is what I got:
Cabbage(small size) N100
Carrot: N100
Lettuce: N100
Tomatoes: N50
Egg: N30
Preparation:
I rinsed all my vegetables, scraped the carrot skin a Little, boiled the egg, then I diced the Tomatoes (chunky), sliced the lettuce, cabbage and the carrots i diced round.

Then I mixed all in my Little bowl. My healthy veggies is ready...
Later on I decided to add a Little Titus fish abi na Tuna sef. Ok I sha added it for a more yummy taste with my low fat cream.
         

     
The good thing is, I used half of my lettuce and 1/3 of the cabbage. So money well saved.
Myth or True? : eating healthy is expensive

Nda Letty, Igbariogwa, Uku Mango, and the list go on and on but Nda Letty still has that special spot in my heart don’t know about you. 

I was really very little when I started hearing about Nda Letty but it was strictly for my big uncles, aunties, and cousins, as such, I decided to wait till I grow up with the hope that Nda Letty would still be there waiting for me…. 
And oh yes Nda Letty did wait for me… my first encounter with her was last year June sincerely it was worth the wait.

When I was old enough to visit her I forgot she existed not until I met someone in London talking about his cravings for Nda Letty’s special meals and how he would give anything to eat a plate of her white rice and stew right now. Apparently a friend of his came to the UK with a custard bucket of Nda Letty’s mouth-watering stew and kept the information from him until the stew was about to
finish, of which he then invited him and some other friends over for the last super and they felt betrayed that he waited till the stew was finished before he contacted them…. 

All I could think of was how the hell did he pass immigration in Heathrow with a bucket of Nda Letty stew abi stew is not among the contraband goods?? Anyway, I came to the conclusion that since the journey from Nigeria to the UK is just a 6 hours flight depending on the air line though so am sure he would have ensured the stew was frozen.
He was still enraged at his friend for increasing his Nda Letty craving. 
There and then I made a promise to myself to visit her in order to experience this meal that could make a grown ass man nag like one frustrated old virgin maiden. 

I visited Owerri in 2010 with my number 5 agenda in my to do list aimed at paying a visit to Nda Letty Buka and have a taste of her infamous meal of which the gods of my land had other plans cause unfortunately I was placed under house arrest which meant I could not visit the Buka and more frustrating I was unable to send someone to buy a meal from Nda Letty for me as buying food early hours of the morning was a big NO in my house. So I continued to fantasize about the taste of Nda Letty in my dreams which had me see 2011 come and go and still no taste of this mystery food. In 2012, my cousin was busy preparing English breakfast with all them mushroom and fried egg which distracted me from my mission to visit Nda Letty.

Finally, 2013 was surely going to be the year I conquer my obsession to have a taste of Nda Letty's special meal. Knowing I would visit O-Town in July for a wedding, I ensured that everyone within earshot was aware of my sole aim to visit Nda Letty which I sang into their ears and trust me my singing voice is horrible so you can imagine their pain……lol. In order to shut me up my big cousin had no other option than to take me to see Nda Letty and experience the taste of her infamous meal…. This meant that I had to wake up as early as 6am just for us to meet up.

The location is another detail for another day hehehehehe #sealedlips. 

I went, I ordered, I took pictures, I ate, I bought take away and I went home smiling. 

The protein OMG was just too succulent and till date I relieve that experience in my head. Finally I understand and appreciate the fuss about Nda Letty`s Meals… Trust me it was definitely worth the wait.


If in doubt seek Nda Letty out and come to your own conclusion but in my not so humble way I will say ``I rest my case``.

When I was relating my trip to Nda Letty with my uncle just after my first visit to her place, I was informed by him about people who take the first flight to Owerri just to meet up with Nda Letty as she operates under a tight time schedule; which meant that if you arrive there later than 11am my dear its either you get the bottom pot or you are left with nothing but heavy cravings all day. And they get to travel back to their location that same day… a source also told me they sell a bag of rice every day.

This last Christmas break I had the opportunity of visiting Nda Letty again it was like enjoying grandma’s food prepared with fire wood. My source also told me she has been in existence for close to 30 years am still in my wow mood about this information.


My friend recently saw a picture of Nda Letty on my laptop immediately I called Nda Letty she screamed as she said she was invited for Sunday lunch at a friend’s house in Lekki and the friend specifically told her it was Nda Letty all the way from Owerri. She said she was eating and didn’t know when she was going for the fourth plate. 

That’s Nda Letty for you…. "It tastes so good that it would makes you wanna ``Slap or Kiss`` somebody….. Lol whichever rocks your boat the more" in yuyu's voice #smiling


Thanks Maamaa aka MJ SuperStar for making me actualize my Nda Letty fantasy.

I rest my case here all I can say is that whenever you find yourself in Owerri just ask a friend who knows there way around and tell them you want to visit Nda Letty.

GRUBS " PEPFISH SAUCE" RECIPE

One of those crazy days when you feel like cooking something different.... with just 4 major ingredients I was able to whip what I named PEPFISH SAUCE

Strictly for lovers of hot & spicy meal 

Ingredient:

Ruff Blended Fresh Pepper
Diced Onions 
Fresh Croaker Fish
Vegetable Oil
soy sauce (optional)

Preparation:

Spice and steam fish properly;

Heat wok station and add vegetable oil,

Add pinch of salt to the oil immediately add onions;stir for another 3mins before adding pepper;

After 3mins add fish and stir continuously mash fish into the sauce and don't forget to de bone fish to avoid extra work when enjoying your meal;

Spice Pepfish sauce with any spice you intend to add eg: curry, garlic or ginger,bouillion of your choice.

Allow to cook for another 3mins and your Pepfish sauce is ready.

You can enjoy it with Boiled Yam, Rice, Boiled beans, Boil Irish Potatoes, or whatever you can lay your hands on.


N/B: I added a little soy sauce to my pepfish sauce to give it a little bit of Chinese feel

WARNING: Strictly for lover of hot & spicy meal and for my abroad people that have been looking to sweat for a while these recipe is just for you; perfect recipe to send the cold away.
