MY VALENTINE SPECIAL.... WHAT'S YOURS?

I kick start my Thursday morning quite early since my internet service provider decided to wipe my data plan after 2 days of loading it... after several calls to their call center I was told to go to there office where I loaded the bundle.

I left the house that morning to the shopping mall without having breakfast where I got my data plan to find out what happened and to rectify it. 

I was suppose to have a meeting with a friend at her home so I called ahead to find out if there was food at home and she said " hmmm have I forgotten"  then I remembered she was on a serious diet and cos of that she does not stock her house with food stuff so she does not get tempted to cook as she wants to go back to her size 12 asap.

I knew if I get to her house I would find something to cook. I decided to buy my guilty pleasure pringles hot & spicy flavor to hold the hunger.


I got to her house and dropped my bag and went straight to her kitchen I knew I had to eat something before starting any meeting; she asked what I would like to cook then she brought out this pepper paste she always prepares, grilled fish and grilled gizzard.I opened the fridge I saw some carrot and green pepper. I told her white rice and stew and so our meal started.

INGREDIENTS:
Simi pepper paste (homemade)
Carrot striped diced
Green pepper striped diced
Grilled fish
Grilled gizzard diced
Vegetable oil
Salt
Onions
Spice cube


PREPARATION

Put your vegetable oil in a skillet or pot, add a little salt when the oil is hot

Add your onion and fry till its golden brown

Add your simi home made paste fry for another 8 - 10 mins staring continuously

Add your grilled fish and grilled diced gizzard and allow to cook for another 3 mins

Then add the diced carrot and green pepper; allow it cook for less than a minute.

Serve with white boiled rice.


*I couldn't wait to devour the food as the green pepper and carrot flavor gave it another aroma and an appetizing look.

Didn't want to be too greedy I dished out a little but a lot though..... my friend had this small bowl she used to dish out her food and was tempted to go for another round.

Felt so filled afterward; the meeting was somehow sloppy but we just had to do it... and I didn't forget to go home with my takeaway pack.

NIGERIA CELEBRITY PANCAKE MASTER

Since last year August Renle promise to arrange pancakes for me as he calls himself pancake master its February and am still waiting ..... if you hear him describe the way he mixes his pancake you would wish it was in front of you. I had a chat with him one time about his cooking specialty and this is what he told me:

"I started making pancakes when I was a lot younger as my dad who a food technologist gave me the lesson. 

When I traveled to Atlanta in 2009 I went to this place called international house of pancakes (IHOP) where they make different flavors of pancakes, the 1st day I ordered chocolate flavor, 2nd day I went for strawberry, 3rd day blueberry, I tasted different flavors every day I visit them and which was almost every day throughout my stay in Atlanta; They actually do the mixing and frying in front of you. 


After a week of visiting them I went back and told them I would love to learn how to make pancake and they taught me how to prepare correct pancake and since then have been the pancake master though I call it lazy man food."

HAPPY PANCAKE DAY (PANCAKE RECIPE)

I woke up Saturday morning with the intention of preparing vegetable yam porridge (ehhh I no what is going through my friends and family's mind... YAM ADDICT I agree). 

While brushing I realise the tap has stopped running and there was no light to pump water and we had very little water left in the dispenser.... hunger was our friend that morning... 

We started our usual food brain storming session on what to prepare that would not require plenty water and so we agreed on pancakes.

Saturday breakfast was some pancakes and very chilled amstel malt. 

Another Mad pancake combo Click PANCAKES AND BACON

INGREDIENTS FOR 2:

1 cup all-purpose flour, sifted before measuring
1 teaspoons baking powder
1 ½ tablespoons granulated sugar
¾ teaspoon salt
1 large egg
1 cup of milk
1 tablespoon melted butter or cooking spray
Optional: fresh pepper diced in tiny bits
          onions diced in tiny bits 
PREPARATION: 
Sift flour, baking powder, salt and sugar together In a separate bowl

whisk together the eggs and cup of milk;
add to flour mixture, stirring only until smooth. 
Blend in melted butter and if the batter seems too thick pour, add a little more milk. 
Heat a large skillet over medium heat, and coat with melted butter or your cooking spray. 
Pour ¼ cupfuls of batter onto the skillet, and cook until bubbles appear on the surface, a little dry around the edges, and lightly browned on the bottom; flip with a spatula and cook until browned on the other side.

JACKET POTATOES

HERE IS ANOTHER HEALTHY RECIPE FOR DIABETIC PATIENTS

INGREDIENTS

Irish potatoes

Butter-flavored cooking spray

spring onions or thyme

freshly ground black or red pepper

DIP: mixture of sweet chilli and barbecue sauce










PREPARATION

Preheat the oven to 375 F.

Wash the potatoes properly and pierce with a fork. Put in a bake try and place in the oven; bake until the skins are crisp allow about 45 minutes.

Potatoes will be very hot, carefully cut potatoes in half and scoop out little of the gut which you can use later on and leaving the remaining gut attached to the skin.


Spray the inside of each potato skin with butter-flavored cooking spray. Alternatively use your cooking brush to brush the inside with some butter.

Put in the spring onions or thyme and pepper. Return the skins to the oven for 5 to 10 minutes. 

Bring it down and serve using you sweet chilli and barbecue mixture as your dip.

MAMA'S WHEAT PUDDING

I  was home alone with my mum one Friday afternoon and she was complaining that she was tired of eating beans, vegies and plantain porridge. 
We started our brain storming concoction session and we came up with this recipe and since then we have added it to her diet plan menu. 


INGREDIENTS:
wheat, banana and groundnut

PREPARATION: 
1. Put a cup of water inside a pot and mix your wheat into the pot and make sure it's all mixed properly.
2. Per-boil your mixed content and stir continuously till it is cooked and slightly thick.
3. Serve in a bowl plate and allow it cool off then add your diced banana and groundnut.

SWEET GINGER GRUBS TEA (HEALTHY RECIPE)

 INGREDIENTS

6 cups water
1/4 cup peeled and chopped fresh ginger
1/3 cup fresh lemon juice
1/2 cup firmly packed fresh mint leaves
6 tablespoons dark honey
1 lemon, cut into 6 wedges

PREPARATION

Combine water, ginger and lemon juice in a large pot and bring to a boil, then reduce the heat to low and allow it simmer for 5 minutes. Remove from the heat, add the mint, and let it cool off for 5 minutes.


Pass the mixture through a fine-mesh sieve, placed over a pitcher, pressing down lightly on the ginger and mint. Discard your mint and ginger.


Stir the honey into the grubs tea. Serve hot or iced, garnished with a lemon wedge.

For cake lovers with just 4 ingredients, you can get your cake ready in less than 25 minutes without using a mixer or doing the mixing yourself except the less than 2 minutes mixing of the cake mix with water, eggs and vegetable oil.


 and the end result is this. 

sponge cake it is but there is nothing like the traditional cake we all love where you get to do everything from scratch. Though tasty; I would rather do the suffer head mixing till sugar dissolves into the butter to get my perfect sumptious traditional cake. For your quiky cake, you can buy cake-mix in major supermarket around you with directions on how to use it on the pack.

CARROT SOUP

EVERY WEEK I WOULD GET TO POST ONE HEALTHY RECIPE FOR DIABETES AND HIGH BLOOD PRESSURE PATIENTS. AND THIS WEEK I PRESENT TO YOU CARROT SOUP.


TIPS: 
One medium carrot meets more than 1/3 of your daily need for vitamin A (beta carotene). 
Carrots is said to be a good source of fiber.

Carrot soup is one healthy food for diabetes and high blood pressure patient.

INGREDIENTS:
10 carrots, scraped and sliced or diced

1 1/2 tablespoons sugar

2 cups water

3 tablespoons all-purpose (plain) flour

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon ground nutmeg

4 cups fat-free milk

2 tablespoons fresh parsley, chopped
Directions

PREPARATION: 

In a large saucepan, heat the carrots, sugar and water. Cover and simmer until the carrots are tender, about 20 minutes. Drain the carrots, reserving some of the liquid. Set aside.


In a separate saucepan, whisk together the flour, salt, pepper, nutmeg and milk. Cook over medium-high heat, stirring constantly until the white sauce thickens.


In a blender or food processor, add the cooked carrots and carrot sauce. Puree until smooth. Add reserved liquid to desired consistency. 

Garnish with teaspoon parsley. Serve immediately.
CARROT SOUP

Serve your carrot soup with bread or maybe try boiled rice or boiled Irish potatoes with it.
